French Onion Soup
A classic that is about as good as it gets. You crave it, seek it out in restaurants, and now you can make it at home…oh, so good!
Combine cheeses and set mixture aside.
Melt butter with olive oil over medium-high heat. Add onions and season lightly with salt. Reduce heat to medium-low and saute onions until browned and tender (20 to 30 minutes). Deglaze pan with Sherry. Season with salt and pepper. Add beef and chicken stock, thyme, bay leaves and stir to combine. Reduce heat to low and simmer for at least 1 hour. Ladle soup into oven-proof ramekins. Top each with a toasted baguette round and a portion of the cheese mixture. Broil until cheese is melted and lightly browned.
